All about muffins to preserve these huge bags of organic fruits (yes, bulk buy isn't fun if it's buying all for the toddler)!
Makes about 12 muffins
Ingredients
- 5 apples grated
- 1 pear grated
- 2 bananas
- 4 eggs
- 2 tbsp coconut oil
- 1/4 cup coconut sugar
- 1/2 cup gluten free flour
- 1-2 tbsp coconut flour
- Cinnamon powder
- Vanilla essence
Method
- Pre heat oven to 180degC. Line 12-tray muffin tray with cupcake/muffin liners.
- In a food processor, grate all apples and pears (pealed).
- Using a bigger blade, add banans, sugar, oil, eggs and further blend.
- Add flour and vanilla essence and blend until all mixed.
- Scoop around 3 tbsp to each muffin tray or fill it to the top.
- Bake for 25-30 minutes.
