Avocado brownie pudding

Just coz I had to use up the food in the pantry. It was off this post that I referenced to and Its pretty much blending everything in the food processor:

  • 4 Bananas
  • 2.5 Avocados
  • 5 eggs
  • cacao powder
  • sugar (1/4 cup)
  • Almond flour (1/4 cup)
  • gluten free flour (1/4 cup)

I had to cook longer in the oven just because I used a high tray. So it took a good 45mins before the core hardens.

The verdict? My kids who dislikes avocado's loved it!

Eaten yummy when cold

Made in a 7" inch square tray which makes around 8 pieces of 2cm cubes.

Modified Chocolate Brownies

Well, I thought I needed to bake these brownies from this recipe but no it was straight into the fridge ready to eat.

Then again I had uncooked cashew nuts....so better be safe and bake them slightly

Turned out amazingly moist and hits the spot with all the nutty ingredients, packed intensely with wonderful energy and healthy 'fats'

Thanks Kim though! For the instant simple recipe, using initially only just 4 ingredients.

Makes roughly 12 pieces from an 8" square baking tray

Gluten Free flour substitutions

Thought I'd pen this down as a quick reference. My sister introduced her version of Avocado chocolate cake and it was delish! She used brown rice flour instead of coconut flour and it works much better as it's less coconut taste and crumbly.

Anyway, the link to the snippets below are from here.

Feel free to explore the alternatives :)

Mini Lemon Cheesecake

But there is no cheese~!

 photo IMG_20180612_150221_zpsqenwlpmx_edit_1528795755254_zpsswtlkcdm.jpg photo IMG_20180612_150250_zpsrhbtl9xd_edit_1528795783835_zpsnjbt1prm.jpg

My first ever virgin gluten and dairy free cheesecake. Tastes pretty good but I think the lemon does hide alot of the bigger flavours...

The only thing different I did was to use cranberries instead of dates for the base so it looks abit more redder than usual.

Tastes pretty amazing but there is a strong coconut flavour in general. I was trying to get my kid to try it but it's not his thing. Either that I gave it to him when he is too full. Oh well, it's for me to have heh.

Lamb shank muffins

Just because it tastes like one to me! Although I have another leg lamb piece, steamed kale and brussel sprouts added not to mention sweet potato and carrots that was baked with the lamb.

 photo C73680B8-6030-4255-9F61-B21930ECAB13_zpsc5ltgrs0.jpg

Mmmm

All because my kiddo can't bite at the moment and muffins are the easiest for grabbing and poking and ensuring he gets good food in him.

Yes, ALL the stuff I'm cooking is now organic....and I'm glad he is the only one taking it coz it really bites on the price.

Follow this recipe to bake the lamb shanks. I just add the sweet potato and carrots at the bottom and sprinkled olive oil and salt for flavour before placing the lamb shanks on top.

No, this is the VITAL ingredient for him. GREENS~~

Makes about 15 large muffins

Beetroot Carrot Muffins

Never knew it tasted so good! I must have added a bunch of stuff to make up for the bitter after taste since it was my first time using real beetroot and getting my hands coloured..

 photo IMG_20170325_202456_zpsy894dqjv.jpg

I didn't realised I was also using the same ingredients from this other surprised carrot blueberry muffin recipe too. I guess I do love that combo of sweet carrots and refreshing apples together with a tinge of sweet potato to fill one's tummy sweetly and gracefully.

 photo IMG_20170325_202448_zps1njx8esf.jpg

I pretty much dumped everything in and was relying on my vision to see how thick the texture is with the flour estimation. I did ran out of Gluten free flour so added a touch of coconut flour which was just right (can't taste it for a change).

 photo IMG_20170325_202958_zpsm96b1e6o.jpg

The strong taste is definitely the beetroot. But it's supported by the other goodness of natural sweet carrots, apples, raisins and sweet potato.

Makes 6 muffins

Vegetarian Nuggets round 2

This time with a little more structure and prediction hahaha.

 photo IMG_20170319_212506_zpsvwkqrutt.jpg

Well, I got carried away by trying to add one more vege to the mince but the bowl was too full and I didn't want to go beyond the tray, and squares were easier to semi circle.

Exactly the same process as my previous post but I change the veges instead.

 photo IMG_20170319_212107_zpstbjumtdd.jpg

This time I used:

  • 2 x Carrots (for sweetness)
  • 2 x Sweet potatoes (for sweetness)
  • 1 x Broccoli
  • A bag of Long Beans (About 350 grams)
  • A bag of Brussel Sprouts
  • Spinach steamed by my MIL
  • A spoonful of LSA

Made 90 nuggets

Sweet Potato Banana Bites

I love the way the title was written and yes I had leftover sweet potatoes again so was wondering what to do with it.

 photo IMG_20170318_092826_zpsjvklk2y9.jpg

Looks kinds 'bland' but it does tastes edible lol. I didn't put any oil, and should have dropped in some raisins or something. Oh well, it's just bites for li'l E to have as snacks.

 photo IMG_20170318_091944_zpse3nqa4t3.jpg

Should have coated with egg wash....

 photo IMG_20170318_092808_zpsyfg5t5em.jpg

Doesn't look appetizing but tastes good~~

Original recipe here

Makes 6 cupcakes (note this is different to muffin trays as the depth of the cups are smaller)

Surprise Carrot blueberry muffins

I actually have no idea what to call it to be honest but a whole portion of it was made of carrots and blueberries. Plus other sweet natural fruit and vege too.

 photo IMG_20170315_135324_zps8ycxwsqj.jpg

You can literally eat this raw without the eggs and flour lol

 photo IMG_20170315_212128_zpskt46qclb.jpg

No baking powder, so I can literally pour extra over each tray!

It turned out so delicious my son loved it! Felt really strong in the coconut just coz I added a tad bit too much flour again. All good, it's so nutritious, gluten free and dairy to the point that I am happy to eat it, also moist too! yay.

Will see how I can remember how the ingredients were coz it was all estimated!

Makes 6 big muffins

Vegetarian Nuggets

It's alot of work, but it's so worth it making it delicious, especially with superfood.

 photo IMG_20170304_222607_zpsslkhvhxt.jpg

I pretty much followed the process in the video but changed the ingredients instead, taking the chance to use chicken peas as a form of sticky ingredient to avoid too much carbs and made sure the wet ingredients are dried out (which it did since I blend it while it's hot)

The longest process was probably blending, coz I had to use a tiny coffee grinder

Option to put it in the freezer or bake them

 photo IMG_20170305_015418_zpsi0vjnq1k.jpg

Add coconut oil coat when bake

This ingredient made about 50 pieces easily I think depending on the size but its about half an ice cream scoop per piece

Chocolate Avocado Brownies

Also another great recipe to try coz not only it reduces the calories, it is so moist!! No need for oil too

 photo IMG_20170224_091918_zpsyqnidnwe.jpg

 photo IMG_20170224_092118_zpswg75wlfo.jpg

Most of the 'fats' or moistness comes from the avocado itself.

 photo IMG_20170224_082353_zpsxyzrv1vj.jpg

I didn't go hard on the maple syrup but I should have coz it wasn't sweet enough. Then again, it would work well with vanilla ice cream.

I mainly used all the ingredients from this video:

Broccoli Salad

So xmas there was an invite as well we were asked to bring a dish so I couldn't think of anything (as usual I didn't want to make something 'unhealthy' so salad was on my mind.

of course I didn't just want to buy mix leaves and dressing (that would be embarrassing plus I looked 'lazy'). My favourite looking back was all time broccoli salad which needed to be made the night before and it does take a bit of effort if done from scratch.

I knew a vegetable like this would fair well with sourish and salty condiments plus a dressing similar but on a sweeter end to fuse with the condiments.

This was perfect.

I assembled everything together on the day itself just coz it was Christmas day and we were going to be out the whole day. This salad was for dinner.

Peanut Butter Choc Protein Balls

Bit of a handful in the title ain't it? But once it's popped into the mouth, it's a lovely mouthful of yummilicious goodness.

I had a weekend to myself and there I was looking up at recipes to make, but alas I didn't have a crowd to share with. Also, I had a lot of time (and was indeed restless) plus I didn't want to buy too many more ingredients. So here I am thinking of something healthy and beneficial instead.

 photo IMG_20160924_210909_zps2y0byw8z.jpg

Protein balls! Bit on the higher side of calorie content as it's got oats and peanut butter. These snacks are the current fad apparently and it is really easy to make as there is no need for baking required. You need to finish them up within a week though I cut the ingredients down further from this recipe.

Just get your hand in!

Interested? Head below to find out more on the ingredients and method. (Makes about 10 x 1" balls)

Less ingredients = Healthy food?

Time to revive this space. I have started to settle much better in my new profound surrounding (and a larger kitchen, WOOHOO) and have already looked into what to cook.

Are you up for a 10-day challenge? Drinking 6-12 cups a day of this: Maple syrup, lemon juice and Cayenne Pepper mixed in water

In the mean time, this lovely Mei of mine is going through this interesting Detox programme called Master Cleanse. One morning, where I woke up, unable to sleep I read the whole article about it and it brought up alot of questions. One being about the title above. But before I go into further detail, I am rather tempted to try this Detox thing although it is going to be uncomfortable to start off with. Not a great idea when first day of work is on Monday...Anyway, Master Cleanse is a whole topic to discuss about so I better not run off the topic.

And btw...I'm not doing it to diet. I am rather more interested in getting rid of the detox in the body.

It seams that the great Stanley Burroughs mention that it takes extra effort to make a certain food unhealthy. This includes adding alot of extra ingredients or salt and pepper just to make it 'tasty'. It was described somewhat direct, in a way it had some truth in it, and in other ways it sounds just too good to be true. It make me wonder alot at this moment of time, as whilst reading this at the same time, I'm actually looking at asian recipes. They do have alot of spices involved (such as chinese 5 spices, soy sauce) in which I'm sort unaware of whether it does greater good to health or is merely just an added taste to the meal. Apparently soy sauce is a great replacement to salt (says my good food blogger aka friend the innovative baker and her latest article) and 5 spices are from herbs.....*the thoughts go on*

I found this article of making food much healthier. This is by replacing certain things that the body takes more time to break down such as dairy, cheese, white bread etc. Check this article on: Modifying a Recipe to be Healthier

Anyway, I have made my own conclusion. Dr. Stanely has some facts in his article and is abit of an extremist. As I kept reading, the more truth I take in, seems the harder I believe. But I'm glad I read it because it has brought to remind me to be health conscious once more. But hey, when one loves to cook, one always does want to know what goes into a meal and of course one tends to make cooking a pleasure, an art or nutritious.

Fund Raising

Not really what you might think as it isn't really food related but it's just a post to say that I have brought up a challenge for myself until early spring (although I would think baking to raise funds might be a better alternative instead, haha)

Yes, history repeats itself. I have started training again.

Not many of you may know that I used to be an athlete of some sort. Was pretty much representing my state from young beginning with gymnastics and athletics, and then swimming, and then into social badminton, netball and now I'm at the gym.

I then tried spins for the first time last year. And I got addicted.

And so I pondered 'why not get involved in something for the greater good with this addiction?'

And so, I have decided to do something I have never ever done in my life. To cycle 300miles in 5 days from London to Paris. Yes, you're talking to the most inexperience bike rider over here who has not ridden more than 10km in her entire life. Check out the map (there's a cute comic at the bottom left):

As well as she doesn't own her own bicycle.

It is by far the craziest thing I have ever done in my life. But I really want to do this. I really want to know how far I can get on cycling despite all of my past injuries that I came across in my life. Almost every important part of my limb has been overworked, injured, overused. And yet old habits don't die. I want to take myself to the limits again.

It ain't easy, mind you. I have started the sessions. I have done 4 sessions of spin classes, 2 sessions of toning and 2 sessions of cardio. I have to take extra care that I don't overwork myself and injure myself so soon. I too have to balance my workout sessions with work, in which the load has also recently shot up to the roof. There is then figuring out what to eat quickly and healthily as well as there is the social side of life I have to keep up with.

Anyway, enough of the boring stuff! If you've got spare change lying in your pockets or behind the couch by your half eaten chocolate bar, feel free to pop it into the following picture to support the event =)

In the mean time, I am of course eying out on what to bake next when I come back from the French Alps!
