Seri Muka

Once I start, I can't stop! It all started when my other half suggests to bring a dessert to a host who were planning on making nasi lemak.



 First time doing it and it was a hit. The flavours were there. Only needed to tweak the steaming process as it didn't come out flat after trying for three times. MOH thinks it's to do with the coconut cream brand used. Which can be true.

 I relied on this recipe when making it and substitute the Pandan leaves to a paste which I had cleverly add to reach the right colour.

Flavour tastes amazing regardless!

Mini Lemon Cheesecake

But there is no cheese~!

My first ever virgin gluten and dairy free cheesecake. Tastes pretty good but I think the lemon does hide alot of the bigger flavours...

The only thing different I did was to use cranberries instead of dates for the base so it looks abit more redder than usual.

Tastes pretty amazing but there is a strong coconut flavour in general. I was trying to get my kid to try it but it's not his thing. Either that I gave it to him when he is too full. Oh well, it's for me to have heh.

ABC Muffin (aka Apple Banana Carrot)

Hahaha I didn't realise that literally speaking and manage to summarise the above! Also it's 1-2-3 (1 carrot, 2 apples, 3 bananas. Talk about how easy to learn this recipe)

I was actually running out of muffin ideas. My mind was more focused on the savoury side since we want to get bone broth, and fermented food into our kid.

So it's really all rough estimation here as I was pretty much looking at the texture and stickiness to estimate the batter.


Makes 12 small muffins or cupcake size

Rice Crispy Treats

What do you do when your toddler starts napping for 3.5 hours? Make food! For him lol (well try to)

I whipped this up real quick (well had to whizz up the almonds first), and over estimated the tray needed.

It's quite yummy to pre fry the dessicated coconut actually, and I wasn't sure whether it was enough syrup and nut butter to glue everything together.

It worked anyway...

Surprise Carrot blueberry muffins

I actually have no idea what to call it to be honest but a whole portion of it was made of carrots and blueberries. Plus other sweet natural fruit and vege too.

You can literally eat this raw without the eggs and flour lol

No baking powder, so I can literally pour extra over each tray!


It turned out so delicious my son loved it! Felt really strong in the coconut just coz I added a tad bit too much flour again. All good, it's so nutritious, gluten free and dairy to the point that I am happy to eat it, also moist too! yay.


Will see how I can remember how the ingredients were coz it was all estimated!

Vegetarian Nuggets

It's alot of work, but it's so worth it making it delicious, especially with superfood.

 I pretty much followed the process in the video but changed the ingredients instead, taking the chance to use chicken peas as a form of sticky ingredient to avoid too much carbs and made sure the wet ingredients are dried out (which it did since I blend it while it's hot)




The longest process was probably blending, coz I had to use a tiny coffee grinder

This ingredient made about 50 pieces easily I think depending on the size but its about half an ice cream scoop per piece

Chocolate Avocado Brownies

Also another great recipe to try coz not only it reduces the calories, it is so moist!! No need for oil too

Most of the 'fats' or moistness comes from the avocado itself.

I didn't go hard on the maple syrup but I should have coz it wasn't sweet enough. Then again, it would work well with vanilla ice cream.

Milo cake in a cup

Taken from this video clip! But I tweaked it according to the cup I used. First one was bleh coz I forgot to put the milk in and did it during the microwave period.

Ok, it was already half eaten...
 

It so does better with vanilla ice cream added too.

Ingredients
  • 3 tbsp flour
  • 3 tbsp milo
  • 2 tbsp milk
  • 1.5 tbsp sugar (I used brown)
  • 1.5 tbsp oil (I used coconut and this adds to the 'malaysian' essence too!)
  • 1 egg

Directions
Wack everything in one cup and microwave for 3 minutes. DONE. *slurp*

Ondeh ondeh

And the dessert making continues in this lovely tropical country :). The weather is just as unpredictable regardless as when we were about to check out the zoo, it poured heavily but when it's time to make these lovely desserts, the sun was out.Oh well~

Anyway, this is another one of my first-time attempt and it turned out absolutely delicious! Not too uberly sweet as the salt really help enhance the flavour. Yummm, as well as I do appreciate my sis helping me because she has so much more patient rolling the dough into a ball. Reason for making so many? I'm actually helping out my company do a fundraising event at work and it's to raise funds for the Pakistan Flood Relief event.

Yeah, glutinous rice flour is so adaptable that it dries up so quickly when the air conditioning is on but as soon as I bring the though into the wet kitchen, it becomes moist. As well as I keep having air bubbles in mine, so much so that it starts to float on top as soon as I pop it into the pot! Talk about being more impatient.

Kuih Dadar

Another local kuih from Malaysia that I made for a Steamboat session. It does have a similar trait on it's own in the sense that there is cooking and steaming involved.

I used palm sugar for the first time and gosh the aroma was absolutely stunning when I cooked it with the coconut and pandan leaves. Feel like I was high.

Most of my ingredient portion comes from this handy website from Sugar and Everything Nice as well as there are handy tips too when it comes to the instructions. And as the ladies started to gorged each down (as usual) I had one request to add more salt to the filling (shall add that to the list).

I loved it the moment I took a bite. The outer layer was suprisingly soft, moist and tender. Moreover it didn't taste like a pancake (which I was glad about) and the filling brought back lost memories.

I had another piece straightaway.

Yes, it was sooooo yummyyy....It really has refreshed my memory of my childhood times where of all the dessert snacks that I had, I was always after that brown filling. Now I have the power to make it as much as I want! *evil laugh*

 
Palm sugar (my new love =P) and Pandan juice that was kept in the freezer.

And guess what? My brain is furiously ticking onto turning this into a cupcake of some sort..the blend of East and West. I am so fortunate to be exposed to 2 different worlds of different food styles! All to come soon...

Kuih Serimuka

And so I found the perfect way to get rid of the Pandan leaves that was taking up so much space in our little tiny freezer. Well, this event made me took some action if not it'll still be lying in the freezer taking up space. I know there was the alternative to blend them and freeze them in ice cubes as they will last longer but procrastination seems to be my best friend lately. Anyway, there was a gathering happening this weekend and so I decided to attempt to make an Asian sweet dessert done through steaming instead of baking. It did turn out and taste quite good actually. I may have over steamed it to the point that the texture was slightly harder but all good in the end.

The really cool part was that I had to come up with a tool to make my DIY steamer pot aka frying pans and forks haha...here is the link to the original recipe but I had to change the quantities for my cake pan.
