Avocado brownie pudding

Just coz I had to use up the food in the pantry. It was off this post that I referenced to and Its pretty much blending everything in the food processor:

  • 4 Bananas
  • 2.5 Avocados
  • 5 eggs
  • cacao powder
  • sugar (1/4 cup)
  • Almond flour (1/4 cup)
  • gluten free flour (1/4 cup)

I had to cook longer in the oven just because I used a high tray. So it took a good 45mins before the core hardens.

The verdict? My kids who dislikes avocado's loved it!

Eaten yummy when cold

Made in a 7" inch square tray which makes around 8 pieces of 2cm cubes.

Carrot cake GFDF

With cashew base icing! Should have added more lemon juice to make it like a cream cheese frosting.

Tastes a little dense just coz I replaced tapioca flour with rice and it's almond meal that dominates the mix. Just hope my kid likes it else ill be eating it all.

It's got sultanas and cranberries too instead of walnuts just coz I think there is enough nuts with the almond meal...

All of my gluten and dairy free recipe so far are taken from Chloe Moir nutrition. She just makes it easy to make with a quick video clip less than 2 minutes long. Suitable for mothers on the go like me.

See below for recipe. Makes a 9" cake. Original recipe from here

Sweet Potato Chocolate Cake

Baking has become 'cooking' for me in the sense that these days I don't bother with measuring cups or spoons haha. I've become those chef on tv where they just sprinkle using their fingers over the ingredients.

 photo IMG_20180606_142707_zpswxjcfpdg.jpg

But I do must record it so that I remember and know what I did for sure and of course to share it with the others :)

 photo IMG_20180606_104647_zpsneg0myyj.jpg

So here it my latest 'creation' I used pinterest to try my luck to find the right recipe but alas it doesn't really work with me. If you're interested to try check out the method and ingredients.

Apple (& 1 Pear) Muffins

All about muffins to preserve these huge bags of organic fruits (yes, bulk buy isn't fun if it's buying all for the toddler)!

 photo 42F44F6B-5E30-47BF-BC7A-36258400A54C_zpszvske3gm.jpg

I didn't really bother taking photos of the making process just because I forgot haha.

Makes about 12 muffins

ABC Muffin (aka Apple Banana Carrot)

Hahaha I didn't realise that literally speaking and manage to summarise the above! Also it's 1-2-3 (1 carrot, 2 apples, 3 bananas. Talk about how easy to learn this recipe)

And pretty much what you get before the oven

 photo IMG_20170419_122124_zpsirxuuz22.jpg

Is the same as what you get AFTER the oven

 photo IMG_20170419_130953_zps5yuv4nlg.jpg

I was actually running out of muffin ideas. My mind was more focused on the savoury side since we want to get bone broth, and fermented food into our kid.

So it's really all rough estimation here as I was pretty much looking at the texture and stickiness to estimate the batter.

Makes 12 small muffins or cupcake size

Beetroot Carrot Muffins

Never knew it tasted so good! I must have added a bunch of stuff to make up for the bitter after taste since it was my first time using real beetroot and getting my hands coloured..

 photo IMG_20170325_202456_zpsy894dqjv.jpg

I didn't realised I was also using the same ingredients from this other surprised carrot blueberry muffin recipe too. I guess I do love that combo of sweet carrots and refreshing apples together with a tinge of sweet potato to fill one's tummy sweetly and gracefully.

 photo IMG_20170325_202448_zps1njx8esf.jpg

I pretty much dumped everything in and was relying on my vision to see how thick the texture is with the flour estimation. I did ran out of Gluten free flour so added a touch of coconut flour which was just right (can't taste it for a change).

 photo IMG_20170325_202958_zpsm96b1e6o.jpg

The strong taste is definitely the beetroot. But it's supported by the other goodness of natural sweet carrots, apples, raisins and sweet potato.

Chocolate Spinach Pancakes

You got it right, there are hidden spinach in this pancake!

 photo IMG_20170320_222028_zpskbghl6ry.jpg

I'm amazed how blenders can liquify things so much nobody knows unless they are sensitive to the taste. Then again it can always be overpowered by chocolate powder muahaha

Anything to get my kiddo to eat...

Original recipe here, real simple! No oil, gluten free too!

Made about 8 pancakes for me with a 1/3 cup

Sweet Potato Banana Bites

I love the way the title was written and yes I had leftover sweet potatoes again so was wondering what to do with it.

 photo IMG_20170318_092826_zpsjvklk2y9.jpg

Looks kinds 'bland' but it does tastes edible lol. I didn't put any oil, and should have dropped in some raisins or something. Oh well, it's just bites for li'l E to have as snacks.

 photo IMG_20170318_091944_zpse3nqa4t3.jpg

Should have coated with egg wash....

 photo IMG_20170318_092808_zpsyfg5t5em.jpg

Doesn't look appetizing but tastes good~~

Original recipe here

Makes 6 cupcakes (note this is different to muffin trays as the depth of the cups are smaller)

Surprise Carrot blueberry muffins

I actually have no idea what to call it to be honest but a whole portion of it was made of carrots and blueberries. Plus other sweet natural fruit and vege too.

 photo IMG_20170315_135324_zps8ycxwsqj.jpg

You can literally eat this raw without the eggs and flour lol

 photo IMG_20170315_212128_zpskt46qclb.jpg

No baking powder, so I can literally pour extra over each tray!

It turned out so delicious my son loved it! Felt really strong in the coconut just coz I added a tad bit too much flour again. All good, it's so nutritious, gluten free and dairy to the point that I am happy to eat it, also moist too! yay.

Will see how I can remember how the ingredients were coz it was all estimated!

Makes 6 big muffins

Chocolate Avocado Brownies

Also another great recipe to try coz not only it reduces the calories, it is so moist!! No need for oil too

 photo IMG_20170224_091918_zpsyqnidnwe.jpg

 photo IMG_20170224_092118_zpswg75wlfo.jpg

Most of the 'fats' or moistness comes from the avocado itself.

 photo IMG_20170224_082353_zpsxyzrv1vj.jpg

I didn't go hard on the maple syrup but I should have coz it wasn't sweet enough. Then again, it would work well with vanilla ice cream.

I mainly used all the ingredients from this video:

3 Ingredient Pancake!

Oooohhh, so easy to make, so yummy to eat. I even added a bit of peanut butter

Tricky to fry on a pan but i did manage by pouring less

Baking powder is to add the fluffiness

Banana Oatmeal pancake

Round 2! with different modification.

Definite variation from my previous post where I omit milk and added oatmeal instead.

Just realised the way to cook these watery base type mixture is to use a 1/3 cup or less, that way the heat can fuse them together as it's flatter.

Taste just as fulfilling and delicious. It feels great too as it doesn't have flour instead.

I too base the ingredients on this tasty video:

Banana pancake

They are always sooooooooo yummy for some reason. I think it's the juicy and tasty part of the bananas that enhances when you fry them. Pop in a couple of blueberries and you've got a mouthful of 'wow' ness.

Popping in the blueberries (they are better off mixed in the bowl before frying)

Makes 6 spoons of 1/4 cup (smaller size)

The best banana cake you'll ever make

Just coz I made it over the weekend and this actually tastes good! Not as moist and light like the commercial ones but more on the buttery side, which I like of course haha.

My bananas sank down the dough though just coz I didn't follow the instructions. Oh well, the ingredients were simple.

When you go to the effort of baking a cake, especially if you're not a regular baker, it’s only natural to want to start with the best recipe out there. When it comes to banana cake I think my Best-Ever Banana Cake is it!
It is a recipe I have perfected over time, and used over and over again – and one that I always get great feedback about (just check out the comments at the bottom of the recipe!) Even people who don’t normally like banana cake seem to love it.
Bananas new LR_283x283.jpg  Mashed bananas LR_283x283.jpg
One of the tricks for perfect banana cake is to use really ripe bananas – the sugar content increases as they ripen, making them sweeter, and of course they are softer and easier to mash so they break down more easily in the cake batter.
Bananas are one fruit you never need to throw out – even when they are deeply speckled and soft they are great for cakes and muffins, and if you can’t deal with them at the time they freeze fabulously – just throw them in the freezer in their skins. They’ll go a bit black as they freeze, but when you’re ready to use them you can just thaw them, then peel and mash them as usual. You’ll never throw another overripe banana away again!
As with most baking you will want to start with all of your ingredients laid out – and at room temperature. The reason recipes call for butter to be at room temperature is so the sugar can cut through it and aerate it so that it becomes fluffy – which you won’t achieve with either cold or melted butter.
The baking soda in the recipe makes sure your banana cake comes out nice and light, and also breaks down the banana fully (as it does for carrot, pumpkin or zucchini mixtures). But be sure to dissolve it in the hot milk first so it’s evenly distributed – there’s nothing worse than a mouthful of baking soda in your cake!
Do be gentle when you fold in the flour; after getting all of that lovely air in there when you creamed the butter and sugar, you don’t want to beat it back out.
Finally, you can make this cake as one 23cm-diameter cake, four 10cm-diameter cakes (recycled 425g tuna cans are perfect – just make sure they don't have a plastic coating inside), or 12 little cupcakes. Topped with a light lemon icing the cupcakes make the perfect afternoon teatime treat, and even better you can freeze them iced!

Best-Ever Banana Cake
Prep time: 15 mins
Cook time: 1 hour (less for smaller cakes)
Makes: 1 large cake, 4 small cakes or 12 muffin-sized cakes
  • 250g butter, at room temperature
  • 1½ cups sugar
  • 4 eggs
  • 2 tsp vanilla extract
  • 4 very ripe bananas, peeled and mashed (about 2 cups)
  • 2 tsp baking soda
  • ½ cup hot milk
  • 3 cups flour
  • 2 tsp baking powder
Lemon Icing:
  • 50g butter, at room temperature
  • 3 tbsp lemon juice
  • 3 cups icing sugar
Preheat oven to 170°C. Line a medium (23cm-diameter) cake tin with baking paper or prepare four 10cm-diameter tins (recycled 425g tuna cans are perfect – just make sure they don't have a plastic coating inside) or 12 muffin tins.
Beat butter and sugar until creamy. Beat in eggs, one at a time, then vanilla and bananas.
Dissolve baking soda in hot milk, add to mixture and stir to combine.
Sift in flour and baking powder and fold gently into mixture using a big spoon and a large scooping action to keep the mixture light. Do not over mix.
Spoon mixture into prepared tin(s) and smooth top(s). Bake until a skewer inserted in the centre comes out clean and the top is springy to the touch. One large cake will take 50-60 minutes, allow 45-55 minutes for medium cakes and about 20 minutes for muffin-sized cakes. Allow to cool in tin(s) and then turn out. Ice when cool. Store in a sealed container in a cool place for 2-3 days or freeze.
Lemon Icing:
Beat together butter, lemon juice, icing sugar and ½ tbsp hot water until creamy. Spread over cake.

I pretty much used Nigella's recipe as a reference point. It's an all in one mix, super easy to do and smells sooooooo good. Would have been better with chocolate chips.
