Claypot Chicken without the claypot

First try, and my hubby thinks it's too rich and addictive. I think I could tell by the amount of water my son drank lol. But it was good first try!



Things to modify:

  • Add more rice (1 more cup perhaps) or
  • Reduce the rich sauces, especially soy
  • Have boneless chicken thighs with skin as when I cut it the bones becomes a choking hazard


I am really liking this website from rasamalaysia and was surprised that it's american owned! They do have real authentic simple ingredients to follow and convenient steps to get to where I want so far. Plus they do nice giveaways. Bummer that I don't live in the USA.

Chicken Split Lentils

Aka chicken 'rice' for our little E. He's still on a GAPS diet so we are trying to avoid rice for him, no matter how much he adores and wants to eat with us (sigh). It was initially made by his grand aunty, so I asked her the steps.

This was the first time I cooked it and it was yummylicious. It can lasts for perhaps 3-4 days for a toddler like him? (he's just shy of 3)

The first mouth I took it really tasted like chicken rice! Just sorta 'mashed' rice texture or mashed potato.

Chicken Schnitzel aka chicken chop

Everybody knows that I am not the best when it comes to cooking (I have no idea why it is much easier process) but I have been wanting to make chicken chop ever since I was in Singapore planning to come back here.

So here is my first attempt!

I pretty much saw this on tv and went (ooooh, I wanna make that!) coz all these while the chicken I bake doesn't give a nice crisp as well as I don't need to deep fry this recipe (yay).

Herbal Chicken Soup

 

Mmmmm, another great alternative instead of soup. This time, cooking this way instead of the usual soup mix is much better in the sense that all flavours essentially do not escape through vapour because the aluminium foil actually keeps the flavour in.

The thing about making this dish is that if you thoroughly want to fully utilise the flavours and herbs, you need to keep the meat marinated for longer, and the cooking process more than an hour. But I did mine in 45 minutes.

And like soup, you can always refrigerate the dish if unfinish and it typically tastes even better the next day :)

Usually this dish is accompanied by a simple green vegetable dish such as kailan.

I found the dish a tad on the sweeter side and the herbs are abit too strong for the number of chickens I used. I shall attempt to make this dish again!

Claypot-less Chicken Rice

Heh, it's pretty much claypot chicken rice but not cooked in a claypot :). I can't believe how the ingredients involved in making this are so similar to the other 2 savoury dishes in my last post (lo mai kai and tea eggs) and by changing the amount or adding a slight herb or spice makes it a totally different dish that has a different taste. So amazing.


Just like how it relates to life doesn't it...and I have no idea why I said that :P

Anyhoo, double post in a row goes to show that I have no plans this Easter besides more training and thinking of what to make in the kitchen. There is a dessert that I am really tempted to try but then again, the weather has gone much brighter these days and so I have succumbed to fresh air instead,heh.

This is dish is very easy to make if you have a rice pot. It's also nourishing and healthy, and all you need is a vege dish to complete your well balanced meal

Chicken Soup for the Soul

This is a dish on its own and that you can pretty much cook this dish to last you at least 3 days. There are so many kinds of version of this soup, depending on one's taste of course but to make it nutritious, well balance and tasty do not really need that much of ingredients. The best part is that keeping the soup for a few more days actually brings more flavour and essence out of the dish!

I love this dish for it's simplicity and well-nourish ingredients, as you don't need any oil at all (it all comes from the chicken) and as the cold weather draws near, there's nothing more fulfilling than a lovely delicious soup.

Mmmm...so perfect for winter

Mum taught me the simplest way to make this soup: Chicken and water. And to make chicken rice, I normally use the soup for cooking the rice.

But I've decided to add a little bit more vegetables to balance the meal. I think this is my simplest version of making chicken soup.


Ingredients:
(If it's for one person, this can last for about 3 days)
  • 3 chicken thighs or drumsticks or carcass (make sure you buy any meat that includes bones as that is where you bring out the nutrients and flavour)
  • 1 onion chopped into cubes
  • 2 potatoes, peeled and chopped into quarters (cubes will make them soften faster)
  • 1 carrot chopped into slices
  • 1 tbsp salt
  • 5 cups of water
Optional: Chinese herbs that you can buy per-packed in chinatown. I normally get mine from See Woo and they have english labels =)

Method:
  1. If using herbs, place them into the pot and bring it to boil before adding the chicken. Let it then simmer for about 20-25 minutes.
  2. If not, pour cold water into a pot and insert the chicken.
  3. Bring the pot to boil. Let it boil for 2 minutes. At this time, add the carrots and potatoes.
  4. And then simmer for 10 minutes.
  5. While simmering, add salt and onions.
  6. Optional to add more salt or water to taste.
Leftover soup can be kept in the fridge for a week (just pop it into the microwave to heat it up again) or in the freezer for a month. Make sure you let it cool completely before placing it into the fridge.

And if you want to use the soup as the stock, all you can do is just drain whatever is in it, pour on ice cubes and pop it in the freezer to be used anytime.
